  • 6 tbsp melted butter
  • 2 (8 oz) packages cream cheese
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 eggs
  • 1 ½ cups fresh strawberries
  • 5 tbsp sugar
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat your oven to 350°F. Line an 8×8 or 9×9 pan with parchment paper and spray with baking spray.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the prepared pan.
  3. In a large bowl, blend softened cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time, mixing on low.
  4. Pour filling over crust and bake for 25-35 minutes until slightly jiggly in the center. Cool on a wire rack for about 1-2 hours.
  5. Refrigerate for at least 3-4 hours before cutting into squares.
