  • 8 ounces turkey slices, chopped
  • 1 (20 ounce) package refrigerated cheese tortellini
  • 2 cups spinach, packed and chopped
  • 8 ounces tomatoes, halved (grape or cherry)
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 1/2 small red onion, diced
  • handful fresh basil, sliced thin
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon sugar
  • 1/4 teaspoon garlic powder
  • Salt & pepper, to taste

Instructions

  1. Boil a large pot of salted water and cook the tortellini according to package directions. Rinse with cool water and drain.
  2. In a small bowl, whisk together olive oil, red apple vinegar, Italian seasoning, sugar, garlic powder, salt, and pepper.
  3. In a large mixing bowl, combine chopped turkey, diced red onion, spinach, halved tomatoes, and sliced basil.
  4. Add cooled tortellini to the bowl and drizzle with dressing. Toss gently until everything is evenly coated.
