  • 1 ½ cups pineapple juice

  • Salt and pepper (to taste)
  • 4 cloves garlic (minced)
  • 1 fresh pineapple (for topping)
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a mixing bowl, combine pineapple juice, minced rosemary, vegetable oil, soy sauce, Dijon mustard, salt, pepper, and minced garlic. Whisk until well mixed.
  2. Place flank steak in a shallow dish or resealable bag and pour marinade over it. Ensure the steak is fully coated. Seal and refrigerate for at least 15 minutes or up to overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove the flank steak from the marinade, letting excess drip off. Grill for about 5 minutes per side or until it reaches desired doneness (135°F for medium-rare).
  5. Meanwhile, cut fresh pineapple into rings and brush with olive oil mixed with minced rosemary and salt. Grill rings for about 2-3 minutes per side until caramelized.
  6. Let the cooked flank steak rest for a few minutes before slicing against the grain. Serve topped with grilled pineapple.
