  • 1/4 cup granulated sugar

  • 2 tablespoons fresh lemon juice (or water)
  • 3 tablespoons cornstarch
  • 1/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. Make the shortbread base by mixing flour, powdered sugar, and salt; stir in melted butter. Press into the prepared pan and bake for 15 minutes until golden.
  3. Prepare the peach layer by tossing chopped peaches with granulated sugar, lemon juice, and cornstarch.
  4. Create the crumble topping by mixing flour, oats, brown sugar, and cinnamon; add melted butter until crumbly.
  5. Assemble by layering the peach mixture over the shortbread base followed by the crumble topping. Bake for 35-45 minutes until golden brown.
