  • 30 Oreo cookies (crust)
  • 5 tablespoons unsalted butter (melted)
  • 24 oz cream cheese
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup sour cream
  • 3 large eggs
  • 4 oz semi-sweet chocolate
  • 1/2 cup whipping cream

Instructions

  1. Preheat your oven to 325F (170C) and prepare a 9-inch springform pan by wrapping it in foil and greasing it lightly.
  2. Crush the Oreo cookies and mix them with melted butter to form the crust; press into the bottom of the prepared pan.
  3. In a mixing bowl, beat cream cheese until smooth, then add sugar, cornstarch, sour cream, vanilla extract, and eggs one at a time until just combined.
  4. Fold in chopped Oreos and pour filling over the crust.
  5. Bake in a water bath for about 60 minutes until set but slightly jiggly in the center.
  6. Allow to cool gradually in the oven before refrigerating overnight.
  7. For the ganache topping, heat whipping cream until simmering and pour over chopped chocolate; stir until smooth and cool before drizzling over chilled cheesecake.
