- 1/2 cup semisweet or dark chocolate chips
- 1/4 cup oat flour
- 1/4 cup vanilla protein powder
- 3 Tbsp peanut butter
- 2 Tbsp brown sugar sweetener
- 2 Tbsp maple syrup
- 1/8 tsp cinnamon
- Pinch of salt
- 6 Tbsp vegan marshmallows fluff
- 12 mini vegan marshmallows (optional for presentation)
- Line a muffin pan with cupcake liners.
- Melt chocolate chips in a microwave-safe bowl and add a spoonful to each liner, spreading it on the bottom and sides. Freeze until set.
- In a mixing bowl, combine oat flour, protein powder, peanut butter, brown sugar sweetener, maple syrup, cinnamon, and salt. Mix until dough-like.
- Flatten small balls of the dough and place them on top of the hardened chocolate layer.
- Spoon vegan marshmallows fluff on top and drizzle remaining melted chocolate before freezing again until fully set.
