  • 2 tablespoons olive oil
  • 1 orange (zest)
  • 1 shallot
  • 2 green onions
  • 1/4 cup chives
  • 1 1/2 cups cherry tomatoes
  • 1/3 cup pitted black olives
  • 2 tablespoons capers
  • 1/2 cup basil
  • 3 tablespoons roasted pine nuts
  • Juice of 1 lemon

Instructions

  2. 2. Prepare Branzino by trimming edges and making four diagonal cuts in the skin.
  3. 3. Place fillets on a greased baking sheet, drizzle with olive oil, and sprinkle with salt.
  4. 4. Roast in the oven for about 10 minutes until opaque.
  5. 5. While fish is cooking, mix shallot, green onions, chives, tomatoes, olives, capers, basil, pine nuts, and olive oil in a bowl.
