  • 1/2 cup milk
  • 2 teaspoons lemon zest
  • 5 cups powdered sugar (for frosting)
  • 4 to 5 tablespoons milk (higher fat content recommended)
  • 2 teaspoons lemon extract
  • 2 teaspoons lemon zest

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake pan with liners.
  2. In a bowl, whisk together cake flour, baking powder, and salt.
  3. Cream unsalted butter and granulated sugar in another bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition; then stir in vanilla extract, lemon juice, and zest.
  5. Gradually add dry mixture alternately with milk into the wet mixture until just combined.
  6. Fill liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  7. Allow to cool before frosting with prepared lemon buttercream.
