  • 60 ml milk
  • 120 ml water
  • 21 g active dry yeast
  • 50 g sugar
  • 550 g Manitoba flour (or bread flour)
  • 2 eggs
  • 1 egg yolk
  • 5 g salt
  • 70 g unsalted butter
  • 350 g chocolate spread or 360 g apricot jam

Instructions

  1. In a bowl, mix lukewarm milk, water, yeast, and sugar. Let it sit for about 10 minutes until frothy.
  2. In a stand mixer with a dough hook, combine flour, eggs, egg yolk, salt, and the yeast mixture. Knead on low then medium speed for about 6–8 minutes until smooth. Add butter and knead an additional 3–4 minutes.
  3. Cover the dough with cling film and let it rise for about 1 to 1.5 hours until doubled in size.
  4. Roll out the dough to about 2 cm thick and cut out heart shapes with a cookie cutter. Let them rise again for about an hour.
  5. Heat oil in a pan to around 170–180°C (340–355°F). Fry the doughnuts in batches until golden brown.
  6. Once cooled slightly, coat in sugar and fill with warm jam or chocolate spread using a pastry bag.
