  • 1 white onion, diced
  • 3 tbsp butter, sliced
  • 1 tbsp olive oil
  • 6 garlic cloves, minced
  • 1 tsp parsley
  • Salt and pepper to taste
  • 1 cup cheddar cheese, shredded
  • 1/2 cup parmesan cheese, shredded

Instructions

  1. Preheat your grill to high.
  2. In a mixing bowl, combine cubed potatoes, diced onion, sliced butter, olive oil, minced garlic, parsley, salt, and pepper until well coated.
  3. Lay out a large piece of tin foil and spray it with cooking spray. Place the potato mixture in the center and seal tightly to form a packet.
