  • 1 tablespoon granulated sugar, for macerating berries
  • 2 tablespoons all-purpose flour, for coating berries
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons light brown sugar, packed (optional, for extra moisture)
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable or canola oil
  • 2 large eggs, at room temperature
  • ¾ cup buttermilk, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. In a small bowl, toss diced strawberries with granulated sugar and let sit for 10-15 minutes. Drain excess juice and coat with flour.
  2. Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
  3. Whisk together flour, baking powder, baking soda, and salt in a large bowl.
  4. In another bowl, combine sugars, melted butter, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet ingredients with dry ingredients gently. Fold in floured strawberries.
  6. Pour batter into the loaf pan and bake for 55-65 minutes until a skewer comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. Prepare the glaze by mixing powdered sugar and milk until smooth; drizzle over cooled bread.
