  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda

  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 tsp vanilla extract
  • ⅓ cup Greek yogurt or sour cream
  • ½ cup finely ground pistachios
  • ¼ cup cocoa powder
  • ½ cup mini chocolate chips
  • 1 cup semi-sweet chocolate chips (glaze)
  • 2 tbsp butter (glaze)
  • 2 tbsp heavy cream (glaze)
  • ½ cup chopped pistachios (topping)
  • ¼ cup mini chocolate chips (topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf or bundt pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine wet ingredients: eggs, vegetable oil, milk, vanilla extract, and Greek yogurt; mix until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Divide the batter into two bowls; fold finely ground pistachios into one half and mix cocoa powder and mini chocolate chips into the other.
  6. Alternate spoonfuls of each batter in the prepared pan and lightly swirl with a knife.
  7. Bake for about 45–55 minutes until a toothpick comes out clean. Allow to cool before removing.
  8. For glaze: melt semi-sweet chocolate chips with butter and heavy cream; pour over cooled bread and top with chopped pistachios.
