  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil (julienned)
  • 2 cups baby spinach
  • 5 sun-dried tomatoes, cut into julienne strips
  • 1 teaspoon arrowroot powder (optional)

Instructions

  1. Season chicken breasts with lemon-pepper seasoning and salt.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken for about 10-12 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove and set aside.
  3. In the same skillet, sauté diced onions until translucent (3-5 minutes), then add minced garlic and cook until fragrant (1 minute).
