  • 1.5 cups corn kernels
  • 1.5 cups cherry tomatoes

  • 2 Tbsp cilantro
  • 12 avocados
  • 0.5 cup plain Greek yogurt
  • 0.25 cup fresh lime juice
  • 2 cloves garlic
  • 0.5 tsp salt
  • 0.125 tsp cayenne pepper

Instructions

  1. Cook the bow tie pasta in salted boiling water until al dente. Drain and rinse with cold water.
  2. While the pasta cools, chop cherry tomatoes, red onion, avocados, and cilantro; set aside.
  3. In a separate bowl, mix Greek yogurt, lime juice, minced garlic, salt, and cayenne until smooth.
  4. In a mixing bowl, combine cooled pasta with chopped vegetables, then pour the dressing over and toss gently.
