Chicken Quinoa and Strawberry Salad is a vibrant, refreshing dish that perfectly balances flavors and textures. This delightful salad features tender, protein-packed chicken paired with juicy strawberries, creamy goat cheese, and creamy avocado, all sitting atop a bed of wholesome quinoa and mixed greens.

Ingredients

  • 1 cup quinoa
  • 3 ounces arugula or mixed greens
  • ¾ lb shredded cooked chicken (about 3 cups)
  • 1 cup crumbled goat cheese (or feta)
  • ½ cup pickled red onions
  • 1 lb strawberries (hulled and sliced)
  • 1 avocado (chunked)
  • ¼ cup sliced almonds
  • 1 cup Marzetti Simply Strawberry Poppyseed Dressing

Instructions

  1. Rinse quinoa under cold water until the water runs clear. Combine with 2 cups of water or broth in a pot. Bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Let sit covered for another 5 minutes before fluffing with a fork.
  3. In a large mixing bowl, combine cooked quinoa and mixed greens.
  4. Layer shredded chicken, crumbled goat cheese, pickled red onions, sliced strawberries, avocado chunks, and sliced almonds over the quinoa mixture.
  5. Just before serving, drizzle dressing over the salad and gently toss to combine.
