  • 1 1/2 cups jasmine rice
  • 1 cup full-fat coconut milk
  • 1 1/2 cups water
  • Zest of 2 limes
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon granulated sugar (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons toasted coconut flakes

Instructions

  1. Rinse jasmine rice under cold water until clear.
  2. In a medium saucepan, whisk together coconut milk, water, sea salt, black pepper, lime zest, and lime juice.
  3. Add rinsed rice to the mixture and bring to a boil over medium-high heat.
  4. Reduce heat to low, cover tightly, and simmer undisturbed for 15 minutes.
  5. Turn off heat and let sit covered for an additional 5 minutes. Fluff with a fork.
  6. Stir in remaining lime zest and half of the cilantro before serving.
  7. Garnish with toasted coconut flakes and remaining cilantro.
