  • 2 medium boneless, skinless chicken breasts
  • 4 slices Turkey Turkey Bacon
  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 1 canned chipotle pepper in adobo sauce
  • 5 orange tomatoes (cherry-sized)
  • 5 red tomatoes (cherry-sized)
  • 1 clove garlic
  • 1 teaspoon lime juice
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon honey
  • Sea salt and freshly ground black pepper
  • 1/2 jalapeno pepper (diced, seeds and veins removed)
  • 2 tablespoons sweet onion (chopped)
  • 1/2 teaspoon red apple vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the creamy chipotle sauce by blending Greek yogurt, mayonnaise, chipotle pepper, garlic, lime juice, and seasonings in a food processor until smooth.
  2. Chop the tomatoes and jalapeno for the salsa, combine with onion and vinegar in a bowl, and set aside.
  3. Preheat your oven to 350°F. Wrap each chicken breast with two slices of Turkey Turkey Bacon.
  4. Heat a cast iron skillet over medium-high heat and sear the bacon-wrapped chicken until browned on both sides.
  5. Transfer the skillet to the oven and bake for about 25 minutes until the chicken reaches an internal temperature of 165°F.
  6. Serve topped with creamy chipotle sauce and fresh salsa.
