  • 5 ounces whole wheat French bread (cut into small cubes)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 3/4 cups chicken broth
  • 2 tablespoons dried cranberries (chopped)
  • 1 teaspoon salted butter (softened)
  • 1/2 tablespoon butter
  • 1/4 cup chopped parsley
  • 1/2 teaspoon turkey or poultry seasoning
  • 1/4 teaspoon kosher salt and fresh pepper (to taste)
  • 1 large egg (beaten)
  • 2 cups turkey or chicken broth
  • 2 leaves fresh sage
  • 3/4 teaspoon turkey or poultry seasoning
  • 1/4 cup all-purpose flour
  • Kosher salt and freshly ground black pepper (to taste)
  • 6 to 8 pieces cooking apple vinegar

Instructions

  1. Preheat your oven to 350°F (175°C). Place the boneless turkey breast skin-side down on a cutting board and pound it to an even thickness.
  2. In a mixing bowl, combine softened butter, minced onion, celery, sage leaves, parsley, poultry seasoning, beaten egg, dried cranberries, cubed bread, and chicken broth. Mix thoroughly.
  3. Spread the stuffing mixture evenly over the turkey breast and roll it tightly into a log shape. Secure with kitchen twine or toothpicks.
  4. Place the roulade in a baking dish, drizzle with apple vinegar, sprinkle with salt, cover loosely with aluminum foil, and bake for about 60 minutes or until cooked through.
  5. While baking, prepare gravy by whisking flour with some broth in a saucepan over medium heat. Add remaining broth and seasonings; simmer until thickened.
  6. Let the roulade rest for about 10 minutes before slicing and serve drizzled with gravy.
