  • 18 mushroom caps (stems removed)
  • 8 ounces mild Italian sausage (without casings)
  • 4 ounces softened cream cheese
  • 1/4 cup grated parmesan
  • 1/2 cup shredded Monterey Jack
  • 3 tablespoons butter
  • 1/2 cup finely diced onion
  • 1 teaspoon minced garlic
  • 1/4 cup chopped parsley (plus more for garnish)
  • 1/3 cup panko crumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté onion and garlic until soft, then add crumbled sausage and cook until browned.
  3. In a mixing bowl, combine the cooked sausage mixture with cream cheese, parmesan, Monterey Jack, parsley, and panko crumbs. Mix until well combined.
  4. Spray a nonstick baking sheet and fill each mushroom cap generously with the stuffing mixture.
  5. Dot with remaining butter and bake for 20–25 minutes until golden brown.
  6. Let cool slightly before garnishing with reserved parsley. Serve warm.
