Enjoy refreshing Sugar Free Blueberry Italian Cream Soda at home! This delicious treat is easy to make and perfect for summer gatherings.

Ingredients

  • 2 1/4 cups blueberries
  • 1 cup granulated sweetener
  • 1 cup filtered water
  • 1 tsp lemon juice
  • Ice
  • 1 cup club soda
  • 3 tbsp half & half
  • Optional: 1/4 cup whipped cream

Instructions

  1. In a medium saucepan, mix filtered water, granulated sweetener, and lemon juice until blended. Add blueberries and simmer over low-medium heat for about 15 minutes.
  2. Mash the blueberries using a wooden spoon or potato masher to release their juices. Increase heat to medium and simmer for an additional 8-10 minutes.
  3. Remove from heat, let cool slightly, then strain through a fine mesh strainer into a bowl to remove solids. Refrigerate syrup for at least 1-2 hours to cool completely.
  4. To serve, fill a tall glass with ice, pour in club soda until half full, add cooled blueberry syrup, and top with half & half. Enjoy immediately!
