2 1/4 cups blueberries
1 cup granulated sweetener
1 cup filtered water
1 tsp lemon juice
Ice
1 cup club soda
3 tbsp half & half
Optional: 1/4 cup whipped cream
Instructions
In a medium saucepan, mix filtered water, granulated sweetener, and lemon juice until blended. Add blueberries and simmer over low-medium heat for about 15 minutes.
Mash the blueberries using a wooden spoon or potato masher to release their juices. Increase heat to medium and simmer for an additional 8-10 minutes.
Remove from heat, let cool slightly, then strain through a fine mesh strainer into a bowl to remove solids. Refrigerate syrup for at least 1-2 hours to cool completely.
To serve, fill a tall glass with ice, pour in club soda until half full, add cooled blueberry syrup, and top with half & half. Enjoy immediately!
