  • ½ cup Milk
  • ½ cup Oil
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 ½ cups Flour
  • 1 ½ teaspoons Baking powder

  • 1 ½ cups Diced strawberries (fresh or frozen)
  • 2 Tablespoons All-purpose flour (for coating strawberries)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5 inch loaf pan.
  2. In a medium bowl, mix sugar, milk, oil, eggs, and vanilla until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Combine the wet and dry mixtures gently without overmixing.
  5. Toss diced strawberries in 2 tablespoons of flour to coat, then carefully fold them into the batter.
  6. Pour the mixture into the prepared loaf pan and bake for 55 – 60 minutes or until a toothpick comes out clean.
  7. Allow to cool on a rack for about 5 minutes before transferring to cool completely.
