  • 1 cup strawberry preserves
  • 2 cups all-purpose flour
  • 1 cup unsalted butter (cold)
  • ⅔ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon vanilla extract
  • 1 teaspoon coarse salt
  • 1 teaspoon granulated sugar (for dough)
  • 45 tablespoons cold water
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons heavy cream or milk (for icing)
  • Rainbow sprinkles (optional)

Instructions

  1. Prepare the filling by mixing sliced strawberries, lemon juice, granulated sugar, and vanilla extract in a medium bowl.
  2. For the dough, combine flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms; chill for 30 minutes.
  3. Roll out the dough into rectangles and cut into desired sizes.
  4. Assemble by placing filling on half of the rectangles, sealing with another rectangle on top.
  5. Bake at 375°F (190°C) for 25-30 minutes until golden brown.
  6. Once cooled, drizzle with icing made from powdered sugar mixed with cream.
