  • 1 1/2 cups strawberries (fresh or frozen)
  • 1/2 cup coconut milk
  • 1/4 cup sugar (or alternative sweetener)

Instructions

  1. In a blender, puree strawberries with 1/4 cup of coconut milk. Adjust sweetness to taste and set aside.
  2. Fill popsicle molds about 1/3 full with the strawberry mixture.
  3. Puree mango with another 1/4 cup of coconut milk, adjusting sweetness as desired.
  4. Carefully layer the mango mixture on top of the strawberry layer in each mold.
  5. Top off each mold with remaining strawberry mixture and insert popsicle sticks.
  6. Freeze for at least 4 hours or overnight until solid.
