  • 4 cups beef broth
  • 3 carrots, chopped
  • 2 celery stalks, chopped

  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 3/4 cup small pasta (like ditalini)
  • Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat and transfer to the slow cooker.
  2. Add chopped carrots, celery, onion, and minced garlic to the slow cooker; stir until well combined.
  3. Stir in diced tomatoes with their juice, tomato paste, beef broth, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. About 30 minutes before serving, add small pasta and allow it to cook until tender.
  6. Garnish with fresh parsley and Parmesan cheese if desired before serving.
