  • 1 lb medium thickness asparagus (trimmed)
  • 4 tsp minced garlic
  • 6 Tbsp butter (diced)
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 2 tsp lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Fresh lemon juice

Instructions

  1. Preheat your grill to medium-high heat (400 – 425°F).
  2. Cut four sheets of heavy-duty aluminum foil (14 x 12 inches) and lay them flat.
  3. Divide shrimp among foil sheets, placing asparagus alongside.
  4. Add vinegar, minced garlic, lemon zest, salt, and pepper to each packet.
  5. Distribute butter cubes evenly on top of the shrimp and asparagus.
  6. Seal the foil packets tightly but leave space for steam.
  7. Cook on the grill for approximately 9 – 10 minutes until shrimp are fully cooked.
  8. Carefully unwrap packets, drizzle with fresh lemon juice, sprinkle with parsley, and serve.
