  • 1 medium onion (sliced)
  • 1 medium red bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 2 14-ounce canned diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon coriander
  • Salt and pepper
  • 56 eggs
  • 1/2 cup crumbled feta cheese (plus more for serving)
  • Fresh cilantro (for garnish)
  • Crusty bread (for serving)

Instructions

  1. Preheat your oven to 375°F.
  2. In a cast iron skillet, heat olive oil over medium heat. Sauté sliced onion and red bell pepper for about 15 minutes until soft. Add minced garlic and cook for an additional minute.
  3. Stir in canned diced tomatoes along with cumin, paprika, coriander, salt, and pepper. Bring to a boil then reduce heat and simmer until thickened.
  4. Create small nests in the sauce and crack eggs into each nest. Season with salt and pepper.
  5. Transfer the skillet to the oven and bake for 8-12 minutes until eggs are set to your liking.
  6. Garnish with fresh cilantro before serving hot with crusty bread or pita.
