  • 2/3 cup dairy-free milk
  • 1 1/2 cups all-purpose flour (or gluten-free 1:1 baking flour)
  • 1/2 cup Dutch-process cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/4 cup unsalted vegan butter
  • 1 cup vegan chocolate
  • 3 cups heavy vegan cream

Instructions

  1. Preheat oven to 350°F. Prepare a 9” springform pan with parchment paper.
  2. Mix dry ingredients: In one bowl, combine flour, cocoa powder, baking powder, and salt. In another bowl, whisk together dairy-free yogurt, melted vegan butter, sugars, and vanilla extract. Gradually mix in the dry ingredients and dairy-free milk until combined; add HOT coffee.
  3. Bake the cake: Pour batter into the springform pan and bake for 33-35 minutes or until a toothpick comes out clean. Cool for 30 minutes.
  4. Prepare mousse: Heat one cup of heavy vegan cream until hot and pour over chopped vegan chocolate; let sit then whisk until smooth. In a chilled bowl, whip remaining heavy cream to stiff peaks and fold in cooled chocolate mixture.
  5. Assemble: Pour mousse over cooled cake layer, smooth out, and chill for at least 3 hours.
  6. Make ganache: Heat remaining heavy cream until hot; pour over chocolate chips and whisk until smooth.
  7. Final assembly: Pour ganache over set mousse layer and chill again before serving.
