  • 1/2 cup fresh lime juice (about 34 limes)
  • 1/4 cup fresh mint leaves
  • 2 tablespoons agave syrup (or sugar to taste)
  • 2 cups club soda or sparkling water
  • Ice cubes for serving

Instructions

  1. Wash cucumbers and limes thoroughly. Slice cucumbers into thin rounds; cut limes in half.
  2. Juice the limes to yield about 1/2 cup of juice.
  3. In a blender, combine cucumber slices, lime juice, mint leaves, and agave syrup. Blend until smooth.
  4. Strain the mixture through a fine mesh strainer into a pitcher to remove pulp.
  5. Add club soda or sparkling water to the strained mixture and stir gently.
