  • 2 1/4 teaspoons instant yeast
  • 1 tablespoon light brown sugar
  • 1 1/2 cups warm water
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon fine sea salt
  • Pretzel salt for topping
  • 6 cups water
  • 1/4 cup baking soda

Instructions

  1. In a mixing bowl, combine warm water, melted butter, yeast, and brown sugar. Stir gently.
  2. Add flour and salt; mix until a rough dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
  3. Place in an oiled bowl, cover with plastic wrap, and let rise in a warm place for about an hour until doubled in size.
  4. Punch down the risen dough and divide into 12 pieces; shape each into a bun.
  5. Boil water and carefully add baking soda; boil each bun for about 30 seconds on each side using a slotted spoon.
  6. Preheat oven to 425°F (220°C). Arrange boiled buns on a lined baking sheet, sprinkle with pretzel salt, and bake for about 12-15 minutes until golden brown.
