  • 120 g shelled pistachios
  • 113 g dark chocolate

  2. Add the granulated sugar and mix until well combined.
  3. Gradually incorporate the all-purpose flour until it forms clumps resembling breadcrumbs. Use your hands to create a smooth dough.
  4. Chop the pistachios roughly and knead two-thirds into the dough.
  5. Shape the dough into a log, wrap it tightly in plastic wrap, and chill for one hour.
  6. Preheat your oven to 320°F (160°C) and line a baking sheet with parchment paper.
  7. Slice the chilled dough into half-inch rounds and place them on the prepared sheet.
  8. Bake for 20-25 minutes until golden at the edges, then cool on the sheet.
  9. Melt dark chocolate in increments in the microwave until smooth.
  10. Dip each cookie halfway into the melted chocolate, sprinkle with remaining chopped pistachios, and let set.
