  • 1 and 1/2 cups packed brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup old-fashioned rolled oats
  • 1 and 1/4 cup blended old-fashioned rolled oats
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (163°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until fluffy. Add in the egg, yolk, and vanilla; mix well.
  3. Combine flour, baking soda, baking powder, and salt in a separate bowl. Gradually add to the wet mixture without overmixing.
  4. Blend one and one-quarter cups of rolled oats into a coarse flour and fold into the dough.
  5. Gently mix in semisweet chocolate chips until just incorporated.
  6. Scoop dough into balls about one and three-quarter tablespoons each on prepared baking sheets, spacing them apart.
  7. Bake for 9–10 minutes until edges are golden but centers remain shiny. Reshape cookies gently if needed after removing from the oven.
  8. Cool on the pan for five minutes before transferring to wire racks.
