  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 large ripe bananas, mashed
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup Nutella (plus more for swirls)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, mix mashed bananas with sugar until well blended.
  4. Stir in the egg and vegetable oil into the banana mixture until smooth.
  5. Add vanilla extract and Nutella; mix until combined.
  6. Gradually fold the dry ingredients into the wet mixture without overmixing.
  7. Optionally fold in chocolate chips if desired.
  8. Spoon batter into muffin cups, filling each about two-thirds full and swirl in extra Nutella as desired.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Cool in the tin for five minutes before transferring to a wire rack.
