  • 2 tablespoons olive oil
  • 1/2 yellow onion (diced)
  • 1 jalapeño (diced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 2 cloves garlic (finely chopped)
  • 1 teaspoon sweet paprika
  • 2 pounds cod (or other firm white fish, cut into pieces)
  • 2 vine tomatoes (chopped)
  • 2 cups vegetable stock
  • 13-ounce can coconut milk
  • Zest of 1 lime
  • Jasmine rice for serving

Instructions

  1. Prepare your ingredients by chopping vegetables and cutting the fish into pieces.
  2. In a large pot, heat coconut oil and olive oil over medium heat. Sauté diced onion and jalapeño until softened, about 3 minutes.
  3. Add sliced bell peppers and sauté for another 3 minutes until tender.
  4. Stir in garlic, paprika, salt, and pepper; cook for an additional minute.
  5. Add chopped tomatoes and their juices; stir for another few minutes until the mixture is saucy.
  6. Pat the fish dry, season with salt and pepper, then place on top of the sautéed vegetables.
  7. Pour in coconut milk and vegetable stock; add lime zest without disturbing the fish.
  8. Cover partially and simmer on low heat for about 10-15 minutes or until the fish is cooked through.
