  • 16 graham crackers
  • 1/2 cup toasted pecans
  • 4 tbsp unsalted butter
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 1 lb cream cheese
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 egg yolks
  • 1/3 cup sour cream

Instructions

  1. Preheat oven to 325°F (163°C).
  2. For the crust, crush graham crackers and pecans; mix with melted butter, sugar, and cinnamon. Press into muffin tin cups.
  3. For the filling, beat cream cheese until smooth, then add salt, sugar, and vanilla. Mix in eggs one at a time followed by sour cream.
  4. Spoon filling over crusts in the muffin tin until three-quarters full.
  5. Bake for about 18 minutes; cool for 10 minutes in the pan before transferring to a wire rack.
  6. Refrigerate for at least two hours before serving.
