  • 10 free-range eggs
  • 150 g baby spinach
  • 200 g cherry tomatoes
  • 1 small red onion
  • 60 g kalamata olives
  • 60 g feta cheese
  • 1 tbsp extra virgin olive oil
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 220°C (425°F) and grease a baking dish with olive oil spray.
  2. Prepare the vegetables: halve cherry tomatoes, chop red onion and olives, and roughly chop spinach.
  3. In a large mixing bowl, whisk together eggs until fully combined.
  4. Mix in chopped olives and crumble in about three-quarters of the feta cheese.
  5. Sauté red onion in a skillet over medium heat until translucent; add cherry tomatoes and oregano.
  6. After searing tomatoes, mix in spinach for one minute before combining with egg mixture.
  7. Pour everything into the greased baking dish and top with remaining feta cheese.
  8. Bake for 22–25 minutes until golden brown; cool for at least 10 minutes before slicing.
