  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic (about 3 cloves)
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced carrots, onion, and celery for about 5 minutes until softened.
  2. Stir in minced garlic, black pepper, parsley, thyme, and salt; cook for another minute until fragrant.
  3. Add bay leaves and chicken breasts to the pot; pour in chicken broth to cover everything. Bring to a boil and then reduce to a simmer. Cook covered for about 30 minutes.
  4. Remove chicken from the pot and shred using forks. Return shredded chicken and add orzo pasta to the soup; simmer uncovered for an additional 10 minutes until pasta is al dente.
  5. Stir in fresh lemon juice before serving hot.
