  • 1 1/4 cups vanilla yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1/3 cup canola oil
  • 2 teaspoons grated lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh blueberries + 2 teaspoons flour
  • 1/3 cup freshly squeezed lemon juice
  • 1/3 cup sugar (for syrup)
  • 3/4 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract (for glaze)
  • milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, sift together the flour, baking powder, and salt.
  3. In another bowl, whisk together yogurt, sugar, eggs, canola oil, lemon zest, and vanilla until well blended.
  4. Gradually add the dry ingredients to the wet mixture and stir until smooth.
  5. Toss blueberries in flour and gently fold them into the batter.
  6. Pour batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
