  • 4 tablespoons dried lavender flowers
  • 1/4 cup boiling water
  • 11/2 cups crushed shortbread cookies
  • 3 tablespoons melted butter
  • 2 packages (8 ounces each) softened cream cheese
  • 3/4 cup honey
  • 11/4 cups heavy whipping cream

Instructions

  1. Prepare lavender water by steeping 3 tablespoons of dried lavender in boiling water for 15 minutes. Strain and set aside.
  2. Combine crushed shortbread cookies, melted butter, and remaining crushed lavender. Press into the bottom of a greased springform pan and refrigerate for 30 minutes.
  3. Beat cream cheese and honey until smooth. Gradually mix in lavender water.
  4. Whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
  5. Spoon filling over the crust and smooth the top. Refrigerate overnight to set.
