  • ½ cup grated red onion
  • 3 garlic cloves (minced)
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup Greek yogurt
  • 2 teaspoons lemon juice
  • 2 teaspoons chopped parsley
  • Burger buns (arugula, tomato, pickled red onions)

Instructions

  1. In a large bowl, combine ground lamb, grated red onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix gently until just combined.
  2. Shape the mixture into four patties about ¾ inch thick with a shallow indent in the center.
  3. For the tzatziki sauce, mix Greek yogurt, lemon juice, parsley, salt, and black pepper in a small bowl until smooth.
  4. Preheat grill to medium heat and lightly oil grates. Grill patties for 3–4 minutes per side or until cooked to desired doneness.
  5. Assemble the burgers on buns topped with arugula, tomato slices, and pickled onions. Drizzle with tzatziki sauce before serving.
