  • 10 tablespoons unsalted butter
  • 1 1/3 cup almond flour
  • 4 eggs
  • 6 slices turkey bacon
  • ½ pound chicken gizzards
  • ½ cup diced onion
  • 1 cup chopped celery
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon corn flavor extract (optional)
  • ½ teaspoon cajun seasoning (optional)
  • ¼ teaspoon cayenne pepper (optional)
  • 2 tablespoons minced fresh sage (or 2 teaspoons dried)
  • 1 tablespoon thyme (or 1 teaspoon dried)
  • ½ cup chopped parsley

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix melted butter, almond flour, eggs, baking powder, salt, and optional seasonings until well combined.
  3. Pour the batter into a greased 8×8 baking dish and bake for 14 minutes or microwave for 6-8 minutes until set.
  4. Let the cornbread cool before cutting it into cubes and broiling them on high until toasted.
  5. Cook turkey bacon in a skillet until crispy; remove and add chicken gizzards, cooking until done.
  6. Sauté onions, celery, garlic, and salt in the same skillet until softened.
  7. In a large bowl, combine sautéed vegetables with turkey bacon, gizzards, herbs, and cubed cornbread.
  8. Transfer to a casserole dish, pour chicken broth over it, cover with foil if baking later, and refrigerate.
  9. When ready to bake, preheat oven to 325°F and bake for 20-30 minutes.
