  • 1 pound cauliflower florets
  • 3 tablespoons butter
  • 3 tablespoons almond flour
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded gruyere cheese
  • 6 slices turkey bacon, crumbled
  • 1 teaspoon fresh thyme

Instructions

  1. Preheat your oven to 375°F.
  2. Steam the cauliflower florets in salted water until fork tender (5–7 minutes).
  3. Remove excess moisture by pressing the steamed florets between paper towels.
  4. In a saucepan, melt butter over medium heat, stir in almond flour, then whisk in heavy cream and seasonings. Simmer until thickened (5–7 minutes).
  5. Stir in cheeses, turkey bacon, and thyme until combined.
  6. Layer half the cheese mixture in a greased skillet or casserole dish, top with cauliflower, then pour remaining cheese mixture over.
  7. Bake for about 25 minutes until golden brown.
