  • 1/4 cup melted unsalted butter
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup Greek yogurt
  • 3/4 cup fresh blueberries (to fold in, tossed with 1 tbsp flour)
  • 3/4 cup fresh blueberries (for topping)
  • 6 oz cream cheese, softened
  • 3 tbsp granulated sugar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 3/4 cup powdered sugar
  • 1 1/2 to 2 1/2 tsp milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together 2/3 cup flour, 1/3 cup brown sugar, 1/4 tsp salt, and 1 tsp baking powder.
  3. In another bowl, mix 1/4 cup melted butter, 1/2 cup granulated sugar, 1/4 cup vegetable oil, 1 egg, 1/2 tsp vanilla extract, and 1/2 cup Greek yogurt until smooth.
  4. Combine the wet and dry ingredients gently without overmixing.
  5. Fold in 3/4 cup blueberries that have been tossed with a tablespoon of flour.
  6. For the cream cheese filling, beat together 6 oz softened cream cheese with 3 tbsp granulated sugar, 1 tsp cornstarch, and 1 tsp vanilla until smooth.
  7. Spoon half the muffin batter into each muffin cavity; add a dollop of cream cheese filling and cover with more batter. Top with additional blueberries.
  8. Bake for about 22 minutes or until golden brown and a toothpick comes out clean.
  9. Allow cooling before serving.
