  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 1 tablespoon tomato paste
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini
  • Kosher salt
  • Fresh cracked pepper
  • Grated Parmesan for garnish
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the ground beef and set aside.
  2. Sauté diced onion, carrots, and celery in the same pot for about 5 minutes until tender.
  3. Add minced garlic, Italian seasoning, and tomato paste; cook for 1 minute.
  4. Stir in tomato sauce, diced tomatoes, cannellini beans, dark red kidney beans, chicken stock, ditalini pasta, and the cooked beef.
  5. Bring to a simmer for 5 minutes or until pasta is al dente.
  6. Adjust seasoning with salt and pepper to taste; garnish with grated Parmesan and parsley before serving.
