Ingredients

Scale
  • 4 tablespoons unsalted butter
  • 1/2 cup + 1 tablespoon granulated sugar
  • 1/4 cup + 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 3 tablespoons sugar (for pudding)
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 3/4 cup whole milk
  • 1 egg yolk
  • 2 tablespoons fruit juice (e.g., apple juice)
  • 1 tablespoon unsalted butter
  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C) and line a loaf pan with parchment paper.
  2. In a microwave-safe bowl, melt butter with sugar and cocoa powder, stirring until smooth. Mix in salt and vanilla, then add the egg and flour, stirring until just combined.
  3. Spread brownie batter into the prepared pan and bake for about 23 minutes until set. Allow to cool before cutting into cubes.
  4. For the pudding, whisk together sugar, cornstarch, and salt in a saucepan. Gradually add milk and egg yolk while continuously whisking over medium heat until thickened.
  5. Stir in butter and fruit juice after removing from heat.
  6. In serving dishes, layer brownie cubes with pudding mixture—aim for three layers if possible. Refrigerate for at least four hours or overnight.
  7. Whip heavy cream with powdered sugar until soft peaks form; dollop on top of each trifle before serving.
