  • 1 tablespoon vegetable oil
  • 2 chicken breasts (cut into strips)
  • 3 tablespoons jerk seasoning
  • 2 cloves garlic (minced)
  • 4 cups dried pasta
  • 2 cups vegetable stock
  • ½ cup heavy cream
  • ½ cup parmesan cheese (grated)
  • 3 bell peppers (sliced)
  • ½ cup green onions (sliced)

Instructions

  1. Heat oil in the Instant Pot on SAUTE mode. Add chicken strips and season with 1.5 tablespoons of jerk seasoning. Cook for a few minutes until slightly browned, then add minced garlic.
  2. Layer dried pasta over the chicken, pour vegetable stock over until slightly covered.
  3. Seal the lid and set to PRESSURE COOK for 5 minutes.
  4. Once done, quickly release steam, stir gently to check liquid levels, and discard any excess if needed.
  5. Stir in remaining jerk seasoning, heavy cream, grated parmesan cheese, and sliced bell peppers. Cover briefly to allow steaming.
  6. Add sliced green onions before serving warm.
