  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (room temperature)
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • ½ cup pistachio cream
  • ½ cup chopped pistachios (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers and melted butter until well mixed. Press the mixture into the bottom of a springform pan. Bake for 10 minutes until golden.
  2. In another bowl, beat cream cheese until smooth. Add sour cream, sugar, and pistachio cream; mix until silky.
  3. Fold in half of the chopped pistachios into the filling and pour over the cooled crust.
  4. Bake for about 60 minutes or until edges are set but center is slightly jiggly.
  5. Turn off the oven and let cheesecake cool inside for one hour. Chill in the fridge for at least four hours before serving.
  6. Before serving, top with remaining chopped pistachios.
