  • 3/4 cup chopped English cucumber
  • 3/4 cup shredded carrot
  • 1 yellow bell pepper (chopped)
  • 1/2 cup diced red onion
  • 5 ounces sliced olives
  • 14 ounces cherry tomatoes (halved)
  • 34 ounces turkey pepperoni (quartered)
  • 6 ounces fresh mozzarella (cubed)
  • 1/3 cup light Caesar dressing
  • 1/3 cup light Greek dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/41/2 cup shredded parmesan cheese

Instructions

  1. Cook the rotini noodles in a large pot of boiling water according to package instructions until al dente. Drain and rinse with cold water.
  2. In a mixing bowl, combine the cooked pasta with cucumber, carrot, yellow bell pepper, red onion, olives, cherry tomatoes, turkey pepperoni, and mozzarella.
  3. Pour in both dressings and season with salt and black pepper. Toss well to combine.
  4. Transfer to a serving dish and garnish with fresh basil if desired. Chill in the refrigerator until ready to serve.
