  • 1 lb chicken breast
  • 1 ½ cups jasmine rice
  • Fresh orange juice and zest
  • 46 cloves of garlic
  • 3 tbsp chopped scallions
  • 1.5 tbsp avocado oil
  • 1.5 tsp minced ginger
  • ½ tsp baking soda
  • 1 tsp garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh orange juice
  • 1½ tbsp soy sauce
  • 1 tbsp cornstarch
  • ⅓ cup fresh orange juice
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • ¼ cup rice vinegar
  • 1½ tsp chili garlic sauce
  • ½ tbsp cornstarch
  • 2 tsp orange zest
  • ½ tsp red chili flakes
  • 3 tbsp brown sugar

Instructions

  1. 1. Cook jasmine rice according to package instructions.
  2. 2. Slice chicken breasts into ½ inch strips.
  3. 3. Grate zest from an orange and juice it.
  4. 4. Marinate chicken in garlic, scallions, avocado oil, ginger, baking soda, salt, and pepper for 30 minutes.
  5. 5. Sauté garlic and ginger in avocado oil in a non-stick skillet until fragrant.
  6. 6. Add marinated chicken; cook until crispy on both sides.
  7. 7. Mix sauce ingredients and pour over cooked chicken; add scallions and cook until heated through.
  8. 8. Serve over rice, garnished with sesame seeds if desired.
