  • 1 lb elbow macaroni or small pasta shells
  • 1 cup shredded carrots
  • 1 cup finely chopped celery
  • 1 small diced red bell pepper
  • ½ cup finely diced red onion
  • ½ cup sweet pickle relish
  • 1 cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp granulated sugar
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Boil the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine shredded carrots, chopped celery, diced bell pepper, diced onion, and sweet pickle relish.
  3. In another bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, paprika, garlic powder, onion powder, salt, and pepper until smooth.
  4. Add the cooked pasta to the vegetable mixture and pour the dressing over it. Gently toss until everything is well coated.
  5. Cover and refrigerate for at least one hour before serving.
