  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup water
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons Mexican oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Cooking spray
  • 6 large flour tortillas
  • 1 ½ cups shredded Mexican cheese blend
  • 1 ½ cups cooked rice
  • 1 (15-ounce) can black beans, rinsed and drained

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add ground beef and chopped onion; season with salt and black pepper. Cook until browned, breaking apart as it cooks.
  2. Stir in water, tomato paste, chili powder, Mexican oregano, garlic powder, and cumin. Simmer on medium-low for 3–5 minutes until thickened.
  3. Lay one tortilla flat and fill with ¼ cup shredded cheese, ¼ cup cooked rice, ½ cup beef mixture, and ¼ cup black beans. Roll tightly.
  4. Wipe skillet and spray with cooking spray. Place burritos seam-side down and cook until golden brown on all sides.
  5. Serve warm with guacamole or salsa.
